Ingredients
The mushrooms, herbs and wine combine into a beautiful autumn flavour. The coffee creates a deeper layer in this dish.
Serve this dish with mashed potatoes, oven potatoes, rice or even pearl couscous to finish.
- 4-5 shallots (small)
- 3 garlic
- 1 tblsp tomato paste
- ts sugar
- ts mustard
- Rosemary
- Thyme
- 600 g mixed mushrooms (e.g. ...)
- A glass of red wine
- 2 ts coffee (taste before putting everything in)
- Nutmeg
- Parsley (for topping)
Topping:
- Sour cream
- ½ tbsp smoked paprika
Preparation
- Cut the shallots and garlic in small pieces
- Slice the mushrooms, but don't make them too small
- Heat a pan with some oil and sautée the onion until glazy, then add the garlic and cook for 1-2 minutes
- Add the tomato paste for one minute, then add the mustard, herbs and sugar
- Add the mixed mushrooms and bake until almost done
- Add the wine and coffee and stove for another 5 minutes
- In the mean time mix the sour cream with half the smoked paprika
- Top of with some chopped parsley for an extra delicious touch
