Shroom stroganov

Ingredients 

The mushrooms, herbs and wine combine into a beautiful autumn flavour. The coffee creates a deeper layer in this dish.
Serve this dish with mashed potatoes, oven potatoes, rice or even pearl couscous to finish.

  • 4-5 shallots (small)
  • 3 garlic
  • 1 tblsp tomato paste
  • ts sugar
  • ts mustard
  • Rosemary
  • Thyme
  • 600 g mixed mushrooms (e.g. ...)
  • A glass of red wine
  • 2 ts coffee (taste before putting everything in)
  • Nutmeg
  • Parsley (for topping)

Topping:

  • Sour cream
  • ½ tbsp smoked paprika

Preparation 

  1. Cut the shallots and garlic in small pieces
  2. Slice the mushrooms, but don't make them too small
  3. Heat a pan with some oil and sautée the onion until glazy, then add the garlic and cook for 1-2 minutes
  4. Add the tomato paste for one minute, then add the mustard, herbs and sugar
  5. Add the mixed mushrooms and bake until almost done
  6. Add the wine and coffee and stove for another 5 minutes
  7. In the mean time mix the sour cream with half the smoked paprika
  8. Top of with some chopped parsley for an extra delicious touch
